The regular and common Butchi is usually round and rolled in sesame seed. However, this Butsi is unique because it has a Latik on the surface and it is shaped into small cubes which is also wrapped in banana leaves. It is also covered with coals to dry the Latik that is placed on top of the Butsi.
Origin
Butsi is famous in Malolos Bulacan. Soledad Dela Cruz started cooking Butsi in 1977. According to Victoria Agarcio, this is what they inherited from her paternal ancestor Gregorio Dela Cruz from Balayong, Malolos Bulacan. It is said to be one of the traditional snacks of the Father of the Katipunan, Andres Bonifacio. It is inspired by the Sesame Balls of China.
Ingredients
- Mongo Beans
- Sugar
- Glutinous Rice Flour
- Jackfruit
- Water
Procedures
- Wash the mongo beans well.
- Put in boiling water and wait for it to cook. until it becomes soft so that nothing hard can be eaten when it is added with sugar.
- Mix the sugar and jackfruit and stir well because it burns easily and so he doesn't have burnt. •After it's cooked, transfer it to a bowl and let it cool.
- For the dough mix the glutinous rice flour with water.
- Fill in the center of the dough then circle.
- Put in the steamer and boil for 1 hour.
- After it's cooked, put oil on top and put a banana leaf on top then turn it over.
- After placing the latik, put it in the steamer and cover it with coals to dry the latik
- After the latik has grown, it is cut into small pieces and then wrapped in banana leaves.
